Tender corned beef cooked low and slow in a 4 qt slow cooker, perfect for a cozy family meal.
3 lb corned beef brisket
6 small potatoes, halved
4 carrots, peeled and cut
1/2 head cabbage, cut in wedges
1 onion, sliced
1 garlic clove
1 bay leaf
1 tsp peppercorns
4 cups beef broth
1. Place vegetables in bottom of 4 qt slow cooker.
2. Set brisket on top, fat side up.
3. Add bay leaf, garlic, and peppercorns.
4. Pour broth over everything.
5. Cover and cook on LOW for 8 hours.
6. Slice meat against grain before serving.
You can use water instead of broth, but beef stock gives richer flavor.
Leftovers make great sandwiches.
