2 lbs chuck steak (or flank, round, skirt)

1 large onion, sliced

4 garlic cloves, minced

1 cup beef broth

1 tbsp Worcestershire sauce

2 tsp balsamic vinegar

2 tsp salt

1 tsp black pepper

1 tsp dried thyme

2 tbsp olive oil

Instructions

1. Pat steak dry and season both sides with salt and pepper.

2. Heat oil in a skillet and sear steak 2–3 minutes per side until browned.

3. Add onions and garlic to bottom of slow cooker.

4. Place steak on top, then pour broth, Worcestershire, and vinegar over.

5. Sprinkle with thyme and cover with lid.

6. Cook on LOW for 8 hours or HIGH for 4–5 hours.

7. Check tenderness with a fork. Serve over mashed potatoes or rice.

Notes

You can substitute balsamic vinegar with red wine for a deeper flavor.

Add sliced carrots or mushrooms for extra heartiness.

Shred leftovers for steak sandwiches or tacos the next day.
