Ingredients
  

  • 3 lb corned beef brisket
  • 6 small potatoes halved
  • 4 carrots peeled and cut
  • ½ head cabbage cut in wedges
  • 1 onion sliced
  • 1 garlic clove
  • 1 bay leaf
  • 1 tsp peppercorns
  • 4 cups beef broth

Method
 

  1. 1. Place vegetables in bottom of 4 qt slow cooker.
  2. 2. Set brisket on top, fat side up.
  3. 3. Add bay leaf, garlic, and peppercorns.
  4. 4. Pour broth over everything.
  5. 5. Cover and cook on LOW for 8 hours.
  6. 6. Slice meat against grain before serving.
