Method
- 1. Place vegetables in bottom of 4 qt slow cooker.
- 2. Set brisket on top, fat side up.
- 3. Add bay leaf, garlic, and peppercorns.
- 4. Pour broth over everything.
- 5. Cover and cook on LOW for 8 hours.
- 6. Slice meat against grain before serving.

Notes
You can use water instead of broth, but beef stock gives richer flavor.
Leftovers make great sandwiches.
